The comforting aroma of apple pie fills the house but arrives in a small, portable cookie package. How delightful!
Cookies meet the brother test, who devoured two cookies even BEFORE caramel drizzle. Impressive. Most impressive.
Apple Pie Cookies
Butter or margarine, softened 1/2 cup
Brown sugar, packed 1.5 cups
Egg 1
All-Purpose Flour 2 Cups
Baking Soda 1 tsp.
Cinnamon 1 tsp.
Cloves 1/2 tsp.
Nutmeg 1/2 tsp.
Salt 1/2 tsp.
2 Apples, peeled and grated 1 cup
Chopped walnuts 1/2 – 1 cup
Milk 1/4 cup
Beat butter, sugar and egg in mixer until smooth.
In a separate bowl, stir flour, baking soda, cinnamon, cloves, nutmeg and salt together. Add to above ingredients and mix.
Stir in the apples, walnuts and milk. Drop by teaspoonfuls onto greased baking sheet. Bake in 400 F (200 C) oven for 8 to 10 minutes. When cool, drizzle with caramel. (Caramel Drizzle is, of course, optional. But it’s so quick and easy to make how could you not… Not to mention delicious!)
Caramel Drizzle
Butter or margarine 2 tbsp.
Brown sugar, packed 2 tbsp.
Icing (confectioner’s) sugar 3/4 cup
Milk 4 tsp.
Combine butter and sugar in a small saucepan. Stir and bring to a boil over medium heat. Simmer for 2 minutes. Remove from heat and add the icing sugar and milk. Add more milk or sugar if needed to make the proper drizzling consistency. Ready to drizzle!
